Tips for Baking Pound Cake

  • Make sure to grease your bundt pan well and dust it with flour. This will ensure your cake doesn’t stick.
  • Smaller Bundt Pan: Fill the pan up to about an inch from the top and bake the remaining batter using a cupcake pan.
  • Bake on the middle oven rack so that the top doesn’t over brown.
  • Check your cake for doneness about 10 minutes before the cooking time is up. Oven temperatures can vary. Inserting a long toothpick or sharp knife near the center will come out clean when the cake is baked through.
  • Use a sharp knife to loosen the cake from the edges of the pan before removing.
  • Allow cake to cool completely for nice, clean slices.

Add a Glaze

Million Dollar Pound Cake is delicious with or without a glaze. I usually just serve it with fresh berries and whipped cream. Add a simple powdered sugar glaze by mixing 1 1/2 cups powdered sugar with 1 tablespoon melted butter and 2 tablespoons of milk. Drizzle over cooled cake.

For a thick and rich glazed try this Amaretto Pound Cake. It’s rich and buttery with delicious Amaretto syrup poured over the top while it’s still warm.

What makes a pound cake fall in the middle? ›

The most common reasons a cake sinks in the middle include the following: The pan is too small. There's too much liquid. Opening the oven or moving pans during baking.

Can you beat a pound cake too much? ›

Mistake: Overbeating The Eggs

Add eggs, one at a time, beating just until the yolk disappears. Overbeating the eggs may cause the batter to overflow the sides of the pan during baking or create a fragile crust that crumbles and separates from the cake as it cools.

Why does my pound cake stick to the pan? ›

I also avoid using butter to grease bundt pans, because the milk solids can bind the cake to the pan, acting like glue. If you've used butter and it's not caused any problems for you, then keep using it.

Why is my pound cake not done in the middle? ›

Pan Issue. The depth of your cake pan and the volume of batter in your cake pan can also contribute to a sunken cake. If the cake pan is too full and the oven temperature is too high, the cake will again cook around the edges and not in the center.

Which is the world's tastiest cake? ›

Recipes. Sponge cake baked with meringue and almonds becomes the centerpiece of this delightful layer cake filled with custard and whipped cream. Kvæfjordkake began its inception in the north of Norway and has earned it's nickname as verdens beste, “the world's best”.

The "Diamond Cake" by Debbie Wingham - Price: $75 million

Which cake is king of cakes? ›

What happens if you put too much baking powder in a pound cake? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

What is wrong with my pound cake? ›

Pound cake is SUPPOSED to be a little dense. But it's not supposed to feel heavy or dry. If it's dry, the cake may have been over-baked. Pound cake can also be too dry if you added too much flour (or not enough butter or sugar).

Should pound cake batter be thick? ›

Unlike layer cakes, which use a thin batter that should never fill the pan more than halfway (more on that here), pound cake batter is thick, and should fill the pan within an inch of the top to encourage a prominent crown.

Should I grease the pan for a pound cake? ›

You need to grease your pans, whether they are non-stick coated or not. Think of it like an insurance policy. Some people recommend butter and flour, others use cooking spray, baking spray, or even cake goop.

Why does my pound cake fall when I take it out of the oven? ›

Too much air and your cake will collapse because it simply can't hold onto all that air. Overbeating can add too much additional air and/or large air bubbles which the cake can't support, causing it to collapse in the oven.

What causes a pound cake to crack on top while baking? ›

Pound cakes, in particular, are dense batters. In the oven, the outside begins to cook much faster than the inside; the crack is from the inner batter rising and releasing steam through the semi-cooked outer batter.

How do you stop a cake from collapsing in the middle? ›

Cake sinking after baking can be prevented by ensuring the oven is preheated correctly, using the right size of baking tin, avoiding opening the oven door too early, checking for doneness with a toothpick, and allowing the cake to cool gradually in the oven before removing it.

How do I keep my pound cake from sinking? ›

For recipes like banana bread, lemon loaf, or pound cake, your best bet is to bake in a metal loaf pan. Metal is a quick and efficient conductor of heat. This helps to ensure your recipe will cook through the center and not collapse.

Why is my cake sunken in the middle? ›

What Causes A Cake To Sink In The Middle? Using too-small tins, not mixing your wet batter right, or being too rough with the oven door often leads to a huge baking flop.
