Try this homemade beer-cheese sauce recipe spiced with jalapeno peppers that doubles as a dip or as a topping for nachos.

Another game day recipe today, an idea for your Super Bowl party that can do double duty. This spicy beer-cheese sauce can serve as a dip or as a sauce for nachos.

Make a double batch and serve them both!

I typically keep a jar of salsa con queso on hand at the house for some of our late-night bashes. I make what has come to be known as "Mike's Late Night Nachos" and they always go over big. I'll have to write up that recipe soon, but I believe I have some competition for the old queso with this recipe.

It isn't overly gooey, which makes it perfect for both a dip and a sauce. It would work with different types of cheeses, so feel free to vary that up and let me know your results. I used some Corona for the beer component, but I'm sure you'd have different results with other types of beer, so if anyone out there is keen on experimenting, please let us know.

I picked up some gorgeous looking red and green jalapeno peppers from the market the other day. Some went into the sauce and some were sliced and added over the nachos. So good! And so colorful...

Spicy Beer-Cheese Sauce Ingredients

  • Olive Oil.
  • Red Jalapeno.Chopped.
  • Green Jalapeno.Chopped.
  • Garlic Cloves.
  • Butter.
  • Flour.
  • Beer.
  • Cream Cheese.
  • White Cheddar.Shredded.

Spicy Beer-Cheese Sauce - The Recipe Method

First, heat up a saucepan to medium heat and add some chopped jalapeno peppers with olive oil. Cook them down about 5 minutes to soften.

Toss in some garlic and cook 1 more minute until garlic is nice and fragrant.

Add in a bit of butter and let it melt.

Next, add in a bit of flour and stir to form a roux. Cook about 10 minutes or so until the roux becomes a nutty brown.

Pour in some beer and stir. Reduce heat to medium-low and continue to stir.

Add some cream cheese and stir to incorporate.

Finally, add in some shredded white cheddar cheese a bit at a time, stirring the entire time, so that the cheese incorporates and becomes creamy.

BOOM! DONE!

Easy, right? And nice and cheesy. Serve it up, my friends, either as a dip or over some chips for nachos. Or hey, spoon it over a hot dog or pretty much anywhere else that needs cheese.

Recipe Tips & Notes

  • For the nachos, spread about 10-12 ounces of corn chips over a plate or into a wide bowl, then top with the beer-cheese sauce. Add over any ingredients you wish, such as sliced jalapenos (fresh, pickled or roasted), avocado, tomato, crema, taco meat, chorizo, or anything else. It worked great!

Storage & Leftovers

Storing yourSpicy Beer-Cheese Saucein anairtight containerin the fridge may allow to keep it for up to 3-4 days (2-3 months in the freezer). To maximize the storage life, make sure to refrigerate the sauce promptly.

    What type of beer is best to use for this everyone I have tried gives the cheese a not so good taste what do you use?

      I use a nice light lager for this, but you can use chicken stock instead.
